American cuisine is hearty and varied. The South, in particular, boasts a very distinctive and unique cuisine with many French and African influences. African slaves from West Africa brought their own cuisine with them. During and after the French occupation in the 18th century, in places like Louisiana, African and French cuisine merged to form Cajun cuisine.
